Tonight I decided to try a new recipe. The great part about this recipe is that it’s a make it now, freeze for later type which is awesome since I am attempting to fill my deep freeze with food for the winter. Just in case I get snowed in for a really long time.
This recipe was pretty easy to make and the end result was not what I was expecting. I placed the muffin pan onto of a baking sheet because I over filled the pockets and assumed it would bubble out. Surprisingly, the biscuit puffed enough that there was practically no over flow. These perfect little uglies are super tasty too! A great treat for now or later.

1 lb ground beef
1/2 c chopped onion
1/2 tsp garlic powder
1-1/2 c bbq sauce
1 (10oz) pkg refrigerated biscuit dough
2 c shredded cheddar
- Preheat oven to 400. Lightly grease 8 muffin cups.
- In a large skillet, cook ground beef with onion and garlic powder until brown. Drain off grease. Stir in BBQ sauce and simmer for 3 minutes.
- Roll out each biscuit on a floured surface so that each biscuit is 6 in across. Put the biscuit in the muffin tin and fold up the sides to create a cup shape. Fill each biscuit almost to the top with the meat mixture. Top with cheese.
- Bake 15 minutes or until the biscuits are golden brown and the cheese is melted.
Freeze any leftovers for later!
