A Case of the Uglies

Tonight I decided to try a new recipe.  The great part about this recipe is that it’s a make it now, freeze for later type which is awesome since I am attempting to fill my deep freeze with food for the winter.  Just in case I get snowed in for a really long time.

This recipe was pretty easy to make and the end result was not what I was expecting.  I placed the muffin pan onto of a baking sheet because I over filled the pockets and assumed it would bubble out.  Surprisingly, the biscuit puffed enough that there was practically no over flow.  These perfect little uglies are super tasty too!  A great treat for now or later.

1 lb ground beef

1/2 c chopped onion

1/2 tsp garlic powder

1-1/2 c bbq sauce

1 (10oz) pkg refrigerated biscuit dough

2 c shredded cheddar


  1.  Preheat oven to 400.  Lightly grease 8 muffin cups.
  2. In a large skillet, cook ground beef with onion and garlic powder until brown.  Drain off grease.  Stir in BBQ sauce and simmer for 3 minutes.
  3. Roll out each biscuit on a floured surface so that each biscuit is 6 in across.  Put the biscuit in the muffin tin and fold up the sides to create a cup shape.  Fill each biscuit almost to the top with the meat mixture.  Top with cheese.
  4. Bake 15 minutes or until the biscuits are golden brown and the cheese is melted.

Freeze any leftovers for later!
